The processing technique remains true to the methods passed down by the Spanish. The traditional cold processing involves heating the cocoa mass to a temperature of 40°C. At this point, sugar is added: this temperature allows the sugar crystals to remain intact within the paste, giving the final product its characteristic rough and granular texture. The mixture is then poured into tin molds (known as "Ianni" in dialect), which are tapped to release air bubbles and ensure even solidification of the mixture.
